Made with the Pommard clone of Pinot Noir. Grapes are hand picked then de-stemmed 85% on top of whole bunch 15%. Open vat fermented on skins for 10 days before being pressed to French oak barriques, 20% new. In Burgundy, from where the Pommard clone originates, this clone distinguishes itself from other clones with its firm and dense tannins. This is a smooth rich Pinot Noir with berry aromas and a savoury pallet. Benefits from decanting at this early stage. Enjoy with BBQ quail, a thick cut steak, roast lamb - or our favourite: Peruvian Duck Casserole.
